Cajun Seafood’s history

Cajun seafood boils have been around for longer than you probably thought…and invented in the 18th century! Afterwards it has gone through an evolution after being exposed to different cultures. 

Cajun cuisine originated from the French, where settlers have brought and developed this unique cuisine to North America during the 18th century. Here in Canada and the US, cajun boils were eaten Western style: with seafood alongside sausages, potato and corn.

During the French colonisation in Asia, a new French-Asian style was developed. This type of seafood boil was made with fish sauce, lemon grass, ginger together with the traditional Cajun ingredients: old bay, garlic butter and Creole seasoning. Typically this dsh was eaten on top of a bowl of white rice in Asia. 

When a stream of Asian migrants came to the US in the seventies, they also brought the new French-Asian fusion back to North America. Both types of Western and Eastern cajun styles fused again into the version as we know today: the French cajun with an Asian twist, consumed alongside corn, sausage and potatoes.

To date, Americans have been eating these popular cajun seafood boils across the country, typically along the coast of California with a view of the beach and sunset. 

The birth of WOWCRAB

We believe that eating seafood this way rather than the traditional way is much more fun and exciting, a true feast to be shared with friends and family. And with that in mind, the concept of the seafood bar was born end of 2021. WOWCRAB elevated the seafood boil concept with unique cocktails and drinks that can be enjoyed with the food and with live music or dj sets in the weekends. After all, this is the place where fun and entertainment meet! After the success of the first restaurant near the old harbour, WOWCRAB has recently opened its second location at the market. And WOWCRAB doesn’t stop there as some new locations are already on its way…to be continued!
